  • 2 lbs raw or pre-cooked shrimp
  • 2 Tbsp unsalted butter
  • 1 diced onion
  • 6 minced garlic cloves
  • 1 jar (12 oz) artichoke hearts, drained and chopped
  • ¼ cup chopped sun-dried tomatoes
  • ½ tsp dried Italian seasoning
  • 1 Tbsp flour
  • 1 bag (8 oz) fresh spinach
  • 1 cup heavy whipping cream
  • ⅔ cup shredded Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat 1 Tbsp butter in a large skillet over medium heat. Add shrimp (seasoned with salt and pepper) and sauté for 2–3 minutes until pink. Remove from skillet.
  2. In the same skillet, add remaining butter and sauté onions until softened (about 2–3 minutes). Stir in minced garlic for another 30 seconds.
  3. Add artichokes, sun-dried tomatoes, Italian seasoning, parsley, paprika, and flour; mix well.
  4. Gradually pour in heavy cream while stirring to combine. Allow the sauce to thicken slightly.
  5. Add fresh spinach; stir until wilted (approximately 2–3 minutes).
  6. Mix in Parmesan cheese until melted and creamy.
  7. Return shrimp to the skillet; heat through for another couple of minutes before serving.
