  • 1 packet Taco Seasoning
  • 1 cup Sour Cream (or Greek Yogurt)
  • 1 cup Shredded Cheddar Cheese
  • 1 can Chopped Green Chilies
  • 1 package Velveeta Cheese
  • 1 can Diced Tomatoes with Green Chilies
  • 8 Tortillas

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken with taco seasoning. Add sour cream and half of the cheddar cheese; mix gently.
  3. Warm tortillas to make them pliable. Spoon about ¼ cup of the chicken mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  4. In another bowl, mix diced tomatoes with green chilies and Velveeta cheese until melted and smooth. Pour over the assembled enchiladas.
  5. Top with remaining cheddar cheese, then bake for approximately 25 minutes until bubbly and golden brown.
