  • 1 ½ pounds boneless skinless chicken thighs
  • 1 can (7 ounces) chipotle peppers in adobo sauce (sauce only)
  • 5 cups chicken broth
  • 2 cans (15 ounces each) sweet corn, drained
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 cup heavy cream
  • 1 medium jalapeño pepper, seeded and diced
  • 2 teaspoons garlic, minced
  • Spices: kosher salt, black pepper, ground coriander, ground cumin
  • Optional garnish: chopped parsley

Instructions

  1. Pat dry chicken thighs and season with salt and pepper.
  2. In a Dutch oven, heat olive oil over medium-high heat; sear chicken thighs until golden brown on both sides. Remove from pot.
  3. Lower heat and add chipotle adobo sauce, coriander, cumin, and garlic; sauté briefly until fragrant.
  4. Stir in sweet corn, pinto beans, jalapeño, fire-roasted tomatoes, red onion, and chicken broth.
  5. Return seared chicken to the pot; bring to a gentle simmer for 25-30 minutes until chicken is cooked through.
  6. Remove chicken; shred it using forks and return to the soup.
  7. Stir in instant rice and let cook for an additional 10 minutes uncovered until rice is tender.
  8. Finally, mix in heavy cream; adjust seasoning if necessary.
