  • 4 cups fresh spinach (or 1 package frozen spinach, thawed and drained)
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg (optional)
  • Optional additions: Sliced mushrooms, artichoke hearts, or cooked pasta

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
  2. In a skillet, sauté the spinach until wilted; set aside. In a bowl, mix cream cheese, sour cream, garlic, onion, salt, and pepper until smooth.
  3. Layer the shredded chicken at the bottom of the casserole dish, followed by the wilted spinach.
  4. Pour the creamy mixture over the layers and gently fold to combine.
  5. Top with mozzarella and Parmesan cheeses before baking for 25-30 minutes until golden brown.
