  • 1 cup (2 sticks or 226g) unsalted butter, softened to room temperature
  • 1 ½ cups light or dark brown sugar
  • ½ cup granulated sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • 1 ¼ cups semi-sweet chocolate chips
  • 15 regular size croissants
  • Powdered sugar (optional for dusting baked cookie croissants)

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Using an electric mixer, cream the softened butter with brown and granulated sugars until fluffy. Add eggs one at a time and mix in vanilla extract until combined.
  4. Gradually fold in the dry ingredients until just mixed, then stir in chocolate chips.
  5. Cut each croissant in half lengthwise to create pockets. Fill each pocket with 2-3 tablespoons of cookie dough and seal.
