  • 1.75 cups chicken broth (low-sodium)
  • 0.66 cup extra virgin olive oil
  • 0.33 cup freshly squeezed lemon juice
  • 3 garlic cloves (finely minced)
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1.5 tsp paprika

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the potatoes into uniform wedges; soak in cold water for 10-15 minutes.
  3. In a large mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, pepper, and paprika.
