  • 1.5 pounds flank steak or skirt steak
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup fresh cilantro, chopped
  • 3 cups cooked white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 large avocado, sliced
  • 1/2 medium red onion, thinly sliced
  • 1 cup cherry tomatoes, halved

Instructions

  1. In a mixing bowl, whisk together lime juice, olive oil, garlic, cilantro, cumin, chili powder, salt, pepper, and smoked paprika to create a marinade.
  2. Place the flank or skirt steak in a zip-top bag and pour the marinade over it. Seal and refrigerate for at least 30 minutes (ideally overnight).
  3. Cook the rice according to package instructions; stir in additional lime juice and cilantro.
  4. Sear the marinated steak in a hot skillet for about 3–4 minutes on each side until the desired doneness is reached. Let it rest before slicing.
  5. Warm the black beans and char the corn in a separate skillet.
  6. Assemble your bowls: layer rice first, followed by black beans, corn, sliced steak, avocado slices, red onion, cherry tomatoes, and top with pico de gallo or salsa.
  7. Drizzle with your choice of dressing made from sour cream or Greek yogurt mixed with lime juice.
