  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

Instructions

  1. Marinate the chicken by combining olive oil, garlic powder, onion powder, paprika, oregano, salt, and pepper in a bowl. Add chicken and coat well; let it marinate for at least 30 minutes.
  2. Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for about 6–7 minutes per side until it reaches an internal temperature of 165°F (75°C). Allow it to rest for 5 minutes before slicing.
  3. For the tzatziki sauce, mix Greek yogurt with lemon juice, minced garlic, salt, and pepper in a separate bowl. Fold in diced cucumber.
  4. To assemble the bowls: place cooked rice or quinoa as the base. Top with sliced grilled chicken, diced cucumbers, cherry tomatoes, red onion slices, and finish with tzatziki sauce.
