  • 1 cup halved cherry tomatoes
  • 1 cup mozzarella pearls

Instructions

  1. In a medium saucepan, bring 2 cups of water or vegetable broth to a boil. Stir in rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes until liquid is absorbed. Let cool for 5 minutes before fluffing with a fork.
  2. In a large mixing bowl, combine cooled quinoa with halved cherry tomatoes and mozzarella pearls.
  3. Drizzle with olive oil, season with salt and pepper, then gently toss to combine.
  4. Sprinkle chopped fresh basil over the salad and fold it in gently.
