  • 1 ring (13.5 oz) chicken or turkey sausage, sliced
  • 1 large onion, diced
  • ½ cup diced celery
  • ½ red bell pepper, diced
  • 2 tsp minced garlic
  • 1 tsp Cajun seasoning
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ¼ tsp cayenne pepper
  • 4 cups chicken broth
  • 4 large russet potatoes, peeled and cubed
  • ½ cup heavy whipping cream
  • 1 cup shredded mild cheddar cheese
  • Chopped parsley for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add sliced sausage and cook until browned. Set aside.
  2. In the same pot, sauté onion, celery, and red bell pepper for about 5–8 minutes until softened. Add minced garlic and cook for another minute.
  3. Stir in Cajun seasoning, salt, black pepper, paprika, and cayenne; cook for an additional minute.
  4. Pour in chicken broth and add cubed potatoes. Bring to a simmer and cook for about 25 minutes or until potatoes are fork-tender.
  5. Return the sausage to the pot along with heavy cream; let simmer for another 5 minutes.
  6. Stir in shredded cheddar cheese until melted and creamy.
  7. Serve hot garnished with chopped parsley.
