  • 4 1/2 cups fresh broccoli florets
  • 1/4 cup red onion, finely chopped
  • 2/3 cup dried cranberries
  • 1/2 cup sliced almonds
  • 1/3 cup roasted sunflower seeds
  • 1 cup sharp cheddar cheese, cubed or shredded
  • 2/3 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 Tbsp apple cider vinegar
  • Zest of 1 small lemon and 1/2 orange
  • Juice of 1 Tbsp fresh lemon juice
  • 1/2 Tbsp poppy seeds
  • Pinch of black pepper

Instructions

  1. Blanch the broccoli florets in boiling salted water for about 20 seconds. Transfer them immediately to an ice bath to cool. Drain well.
  2. Soak chopped red onion in cold water for five minutes to mellow the flavor, then drain.
  3. In a small bowl, whisk together mayonnaise, apple cider vinegar, granulated sugar, lemon zest, orange zest, lemon juice, poppy seeds, and black pepper until smooth.
  4. In a large mixing bowl, combine cooled broccoli, drained red onion, cranberries, sliced almonds, sunflower seeds, and cheddar cheese.
  5. Drizzle half of the dressing over the salad and toss gently to combine. Chill for at least 30 minutes before serving to let flavors meld.
