Ingredients

  • 1 can (15 oz) chickpeas
  • 4 cups fresh spinach
  • 1 cup dried cranberries
  • 1 cup walnuts
  • 1/2 cup red onion
  • 1/4 cup fresh orange juice
  • 1/4 cup olive oil
  • 1 tbsp honey or maple syrup
  • 1 tbsp Dijon mustard
  • Salt & pepper to taste

Instructions

  1. Rinse and drain the chickpeas under cold water.
  2. Chop the spinach and red onion.
  3. In a separate bowl, whisk together the orange juice, olive oil, honey/maple syrup, and Dijon mustard until emulsified.
  4. In a large mixing bowl, combine the chickpeas, spinach, cranberries, walnuts, and red onion.
