  • 1 cup unsalted butter (melted)
  • 1 1/2 cups granulated sugar (divided)
  • Zest of 2 lemons
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 10 ounces cream cheese (softened)
  • 2 cups all-purpose flour (divided)
  • 3 cups blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (177°C) and line an 8"x8" baking pan with foil.
  2. In a large bowl, mix melted butter with ½ cup sugar, salt, and lemon zest until well combined. Gradually fold in 2 cups flour until a soft dough forms.
  3. Press half of the dough into the bottom of the prepared pan and bake for about 15 minutes until golden.
  4. In another bowl, beat softened cream cheese with remaining sugar, eggs (one at a time), vanilla extract, yogurt or sour cream, lemon juice, salt, and additional flour until smooth.
  5. Gently fold in blueberries and pour over the baked crust.
  6. Crumble the remaining dough on top and bake for an additional 45-60 minutes until firm but slightly jiggly in the center.
  7. Allow to cool completely before slicing into squares.
