  • 1/3 cup balsamic vinegar
  • 2 Tbsp honey
  • 2 Tbsp oil (avocado or olive oil)
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 Tbsp Dijon mustard
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 2 Tbsp fresh basil, chopped
  • 2 lb boneless skinless chicken breasts
  • Kosher salt and fresh black pepper

Instructions

  1. In a bowl, whisk together balsamic vinegar, honey, minced garlic, Dijon mustard, salt, and pepper until combined.
  2. In another bowl, mix halved grape tomatoes with mozzarella balls and basil; season with salt and pepper.
  3. Preheat oven to 400°F (200°C). Heat oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper; sear for about 2 minutes per side until golden brown.
  4. Pour the balsamic mixture over the chicken in the skillet and let it simmer for about two minutes.
  5. Layer the tomato-mozzarella mixture over the chicken and transfer the skillet to the oven.
  6. Bake uncovered for 18-23 minutes or until chicken reaches an internal temperature of 165°F (74°C). Let rest for five minutes before serving.
