1/3 cup balsamic vinegar
2 Tbsp honey
2 Tbsp oil (avocado or olive oil)
2 garlic cloves, minced
1 tsp Italian seasoning
1 Tbsp Dijon mustard
8 oz grape tomatoes, halved
8 oz fresh mozzarella balls
2 Tbsp fresh basil, chopped
2 lb boneless skinless chicken breasts
Kosher salt and fresh black pepper
Instructions
In a bowl, whisk together balsamic vinegar, honey, minced garlic, Dijon mustard, salt, and pepper until combined.
In another bowl, mix halved grape tomatoes with mozzarella balls and basil; season with salt and pepper.
Preheat oven to 400°F (200°C). Heat oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper; sear for about 2 minutes per side until golden brown.
Pour the balsamic mixture over the chicken in the skillet and let it simmer for about two minutes.
Layer the tomato-mozzarella mixture over the chicken and transfer the skillet to the oven.
Bake uncovered for 18-23 minutes or until chicken reaches an internal temperature of 165°F (74°C). Let rest for five minutes before serving.
