  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup Vegetable or Chicken Broth

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet.
  2. Scrub and cut the potatoes into uniform 1-inch chunks or wedges.
  3. Soak the potato pieces in cold water for 30–60 minutes, then drain and pat dry.
  4. In a large bowl, whisk together lemon juice, olive oil, garlic, oregano, salt, and pepper.
  5. Toss the dried potato pieces in the marinade until well coated.
