  • 2 English cucumbers
  • 1 shallot (thinly sliced)
  • 1 cup seasoned rice vinegar
  • 2 tbsp sugar
  • 1 tbsp grated ginger
  • 1 tsp sea salt
  • 1 tsp dried red chili flakes
  • 2 tbsp soy sauce

Instructions

  1. Wash and slice the cucumbers into thin rounds (about 1/8 inch thick) using a mandoline or knife. Slice the shallot thinly.
  2. In a medium mixing bowl, combine seasoned rice vinegar, sugar, grated ginger, sea salt, and dried red chili flakes. Stir until sugar and salt dissolve.
  3. In a large bowl or jar, add cucumber slices and shallots; pour over the brine ensuring everything is submerged.
  4. Cover tightly and refrigerate for at least two hours (overnight preferred) to allow flavors to meld.
  5. Before serving, give everything a gentle stir to coat evenly.
