  • 1 lb apricots (chopped)
  • ¾ cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 6 oz unsalted butter (cold)
  • ½ cup sugar (for topping)
  • ¼ tsp salt (for topping)
  • 2 tbsp milk (whole)
  • ½ tsp spice powder (cinnamon, pumpkin spice, or gingerbread spices)

Instructions

  1. Preheat your oven to 375°F (190°C) and line an 8 x 8 square cake pan with parchment paper.
  2. In a bowl or food processor, combine flour, sugar, salt, and spices. Add cold butter and mix until crumbly.
  3. Divide the mixture; press half into the pan as the base.
  4. Bake for about 10 minutes until lightly golden.
  5. In another bowl, mix chopped apricots with sugar, lemon juice, and cornstarch. Let sit for a few minutes.
  6. Pour the apricot filling over the crust and sprinkle the remaining crumble on top.
  7. Bake for 35-40 minutes until the top is golden brown and the filling is bubbly.
  8. Allow cooling completely before slicing into squares.
