  • ¼ cup finely diced onions
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon ground ginger
  • 6 chicken thighs (bone-in, skin-on preferred)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine apricot jam, diced onions, soy sauce, honey, Dijon mustard, apple cider vinegar, minced garlic, and ground ginger until well mixed.
  3. Pat dry the chicken thighs and place them in a baking dish. Pour half of the glaze over the chicken, ensuring each piece is coated.
  4. Marinate the chicken for at least 30 minutes in the refrigerator.
  5. Arrange chicken thighs skin-side up in the baking dish and pour remaining glaze over them.
  6. Bake for 25 minutes; then baste with remaining glaze and continue baking for another 15-20 minutes or until the internal temperature reaches 165°F (74°C).
  7. Allow to rest for 5 minutes before serving, garnished with fresh parsley if desired.
