  • 12 baby potatoes (about 12 oz), scrubbed
  • 2 cups grape tomatoes (about 10 oz), halved
  • 6 oz broccoli florets
  • 3 tbsp fresh minced garlic (about 5 to 6 cloves)
  • Quality Extra Virgin Olive Oil
  • Salt and pepper
  • 2 tsp Za'atar spice, divided
  • 1 tsp coriander, divided
  • 1 lb salmon fillet, no skin
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine baby potatoes, grape tomatoes, and broccoli. Drizzle with olive oil and season with salt, pepper, garlic, za'atar spice, and coriander. Toss well and spread on a baking sheet.
  3. Pat salmon dry and season with salt and pepper. Drizzle with olive oil and spread minced garlic on top.
  4. Cut salmon into four portions and place alongside the veggies on the baking sheet. Drizzle everything lightly with olive oil.
  5. Bake for about 15-16 minutes until the salmon is opaque and flakes easily; squeeze fresh lemon juice over the top before serving.
