  • 1 large sweet potato (12 ounces), diced
  • 1 lb flat iron steak, diced
  • 2 bell peppers, diced
  • 4 green onions, sliced
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp coconut aminos
  • Sea salt and cracked black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Microwave the diced sweet potatoes with salt until tender (about 4-6 minutes).
  2. In a skillet over high heat, add olive oil and cook the steak until browned (about 10 minutes). Remove from the pan.
  3. Add more olive oil to the skillet and brown the sweet potatoes for about 3-4 minutes.
  4. Sauté minced garlic in the center of the pan for one minute.
  5. Add bell peppers and green onions; cook until tender (3-4 minutes).
  6. Return the steak to the pan, add coconut aminos, and cook until heated through.
  7. Season with black pepper and cilantro before serving.
