  • 1¼ cups whole milk
  • 1½ cups fresh or frozen raspberries
  • ½ cup sugar
  • 2 tbsp lemon juice
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup white chocolate, melted and cooled
  • 23 tbsp milk
  • Fresh raspberries
  • White chocolate curls or shavings
  • Mint leaves

Instructions

  1. Preheat oven to 350°F (175°C) and grease three 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream softened butter and sugar until light; add eggs one at a time, then stir in vanilla and melted white chocolate.
  4. Alternate adding dry ingredients with milk to the mixture until just combined.
  5. Bake for 25–30 minutes until a toothpick comes out clean; cool layers on wire racks.
  6. For the raspberry filling, cook raspberries with sugar and lemon juice until soft; thicken with cornstarch slurry and cool.
  7. Beat butter and powdered sugar for frosting; mix in melted white chocolate and vanilla.
  8. Assemble cake layers with frosting and raspberry filling; frost the outside and decorate as desired.
