  • 2 tablespoons olive oil
  • 2 apples (peeled and roughly chopped)
  • 1 white onion (peeled and diced)
  • 4 tablespoons butter
  • 1/4 cup flour
  • 2 1/2 cups chicken broth
  • 3/4 cup half & half
  • 2 cans (15 oz each) cannellini beans (drained)
  • 2 cups shredded Mexican blend cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté chopped apples and diced onion until softened (6-8 minutes). Remove and set aside.
  2. In the same pot, melt butter over medium heat. Whisk in flour and cook for about 60 seconds to create a roux.
  3. Gradually whisk in chicken broth and half & half until smooth; simmer until thickened (3-5 minutes).
  4. Add chicken, drained beans, and the apple-onion mixture to the pot. Stir well to combine; adjust thickness with more broth if needed.
  5. Mix in shredded cheese until melted; serve hot.
