  • 8 oz dried vermicelli noodles
  • 1 medium cucumber
  • 2 medium carrots
  • Fresh cilantro
  • Roasted peanuts
  • 1/2 tablespoon vegetable oil
  • 1 tablespoon soy sauce
  • 2 tablespoons rice vinegar
  • 1/2 tablespoon sesame oil
  • 1/2 tablespoon brown sugar or honey
  • 12 cloves garlic
  • 1 stalk lemongrass, cut into 3-inch pieces
  • 1/2 small onion
  • 1/4 cup water
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon ground black pepper or white pepper
  • 1/2 teaspoon red chili, finely chopped (or to taste)
  • 1 lime, wedged (for serving)

Instructions

  1. For the marinade, combine vegetable oil, soy sauce, sesame oil, brown sugar (or honey), minced garlic, lemongrass pieces, and sliced onion in a bowl.
  2. Add cubed chicken to the marinade and refrigerate for at least an hour.
  3. Cook vermicelli noodles according to package instructions; drain and rinse under cold water.
  4. Heat a skillet over medium-high heat and cook marinated chicken for 7-10 minutes until golden.
  5. In bowls, layer noodles first, followed by cooked chicken and then top with julienned cucumber and carrots. Garnish with cilantro and peanuts.
  6. Whisk together rice vinegar, water, sesame oil, sugar, black pepper (or white), and red chili; drizzle over bowls before serving.
