  • 3 parsnips (peeled and sliced)
  • 3 celery ribs (sliced)
  • ½ medium onion (diced)
  • 1 leek (halved lengthwise, sliced, and rinsed)
  • 4 garlic cloves (minced)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 boneless skinless chicken breasts
  • 2 sprigs fresh thyme
  • 2 sprigs fresh tarragon
  • 1 bay leaf
  • 5 cups low-sodium chicken broth
  • ¼ cup roughly chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté carrots, parsnips, celery, leek, and onion for 4-5 minutes until softened. Add minced garlic, salt, and pepper; cook for an additional minute.
  2. Add chicken breasts and herbs to the pot. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes until chicken is cooked through.
  3. Remove chicken from the pot and shred with forks before returning it to the soup.
  4. Stir in chopped parsley before serving.
