  • 1 tbsp butter
  • 1 tbsp olive oil
  • 4 salmon fillets
  • Salt and pepper
  • 2 cloves garlic
  • 34 sun-dried tomatoes (sliced)
  • 1/2 cup grape juice
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese (grated)
  • 1 cup fresh spinach

Instructions

  1. Pat salmon dry and season with salt and pepper. Heat butter and olive oil in a skillet over medium-high heat. Sear the salmon skin-side up for about 6-7 minutes until golden brown; remove from pan.
  2. In the same pan, sauté minced garlic and sun-dried tomatoes for about 30 seconds. Add grape juice and simmer for 5 minutes until reduced by half.
  3. Stir in heavy cream and grated Parmesan until smooth. Add fresh spinach and return salmon to the pan; simmer for another 5 minutes.
  4. Taste sauce and adjust seasoning before serving warm.
