  • 1 pound boneless, skinless chicken, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1 shallot, minced
  • 2 tablespoons sun-dried tomatoes packed in oil, drained and julienned
  • 1 cup heavy cream
  • â…“ cup grated Parmesan cheese
  • 3 ounces baby spinach
  • Fresh parsley, for garnish (optional)

Instructions

  1. Prepare the spaghetti squash by piercing it and microwaving until tender (8-12 minutes) or roast in the oven. Let cool.
  2. Season chicken with salt, pepper, and Italian seasoning. Melt 1 tablespoon butter in a skillet over medium-high heat and cook chicken until no longer pink; set aside.
  3. In the same skillet, add remaining butter, garlic, shallots, and sun-dried tomatoes; sauté until softened.
  4. Pour in heavy cream, let bubble for a minute, then stir in Parmesan cheese and spinach off heat before returning chicken to skillet.
  5. Once squash has cooled, cut it in half lengthwise, remove seeds, and shred flesh with a fork into strands.
  6. Combine spaghetti squash strands with the creamy sauce mixture and serve garnished with fresh parsley if desired.
