  • 1/2 cup grated parmesan
  • 1 large whole egg plus 1 yolk
  • 1 1/2 pounds ground turkey
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil or avocado oil, for brushing and frying
  • 2 tablespoons ghee or unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup finely minced onion
  • 6 cloves garlic, pressed
  • 2 teaspoons Italian seasoning
  • 15 ounce can organic pumpkin puree
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken stock
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream or coconut cream
  • 2 tablespoons maple syrup
  • 1 tablespoon chopped fresh sage

Instructions

  1. In a bowl, combine breadcrumbs and milk; let soak for 2-3 minutes.
  2. Mix in onion, garlic, sage, parsley, Italian seasoning, parmesan, egg, salt, and pepper until blended.
  3. Fold in ground turkey gently until just mixed; chill meatball mixture for 20-25 minutes.
  4. Shape into meatballs and sear in a skillet until browned on all sides.
  5. For the sauce, sauté onion and garlic in oil, then stir in pumpkin puree and chicken stock; simmer.
  6. Whisk in parmesan, cream, maple syrup, and sage; add cooked meatballs to warm them through.
