Ingredients

Scale
  • 100 g dark chocolate (finely chopped)
  • 50 g natural cocoa powder
  • 230 g unsalted butter (cubed)
  • 4 large eggs
  • 150 g granulated sugar
  • 100 g brown sugar
  • 100 g all-purpose flour
  • 250 g mascarpone cheese (cold)
  • 200 g whipping cream (cold)
  • 50 g powdered sugar
  • 2 teaspoons espresso powder
  • 150 g hot water
  • 12 ladyfingers
  • 1 tablespoon dark vanilla extract
  • 1 tablespoon cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Melt the dark chocolate and butter over simmering water until smooth. Allow it to cool slightly.
  2. Whisk the eggs, granulated sugar, and brown sugar together until light and fluffy. Fold in the cooled chocolate mixture.
  3. Sift in the cocoa powder and flour, mixing gently until just combined.
  4. Pour the batter into a greased baking pan and bake for 30-35 minutes or until a toothpick comes out with moist crumbs. Let cool completely.
  5. Prepare the mascarpone cream by whipping together mascarpone cheese, whipping cream, powdered sugar, espresso powder, and dark vanilla extract until soft peaks form.
  6. Soak ladyfingers briefly in hot water mixed with dark vanilla extract. Layer them on top of cooled brownies.
  7. Spread the mascarpone cream over soaked ladyfingers and dust with cocoa powder. Refrigerate for at least two hours before serving.
