  • 1/4 cup water
  • 2 tbsp pure maple syrup
  • 2 tbsp apple cider vinegar
  • 1/2 tsp minced garlic
  • Heaping 1/2 tsp sea salt
  • Freshly ground black pepper
  • 2 large broccoli crowns (florets only), finely chopped
  • 1 1/2 cups red grapes (halved)
  • 1/3 cup roasted salted almonds (finely chopped)
  • 3/4 cup diced red onion
  • 1/3 cup dried cranberries or raisins

Instructions

  1. Soak cashews for at least 2 hours (or in hot water for 10 minutes), then drain.
  2. Blend soaked cashews with water, maple syrup, apple cider vinegar, garlic, sea salt, and black pepper until smooth.
  3. Finely chop broccoli crowns and place in a mixing bowl with halved grapes, chopped almonds, diced onion, and cranberries.
  4. Pour the dressing over the salad mixture and toss gently to combine.
  5. Chill in the refrigerator for at least one hour before serving.
