  • ½ pound turkey strips (cut into small dice)
  • 3 medium shallots (halved and thinly sliced)
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear (diced)
  • 1 lemon (zested and juiced)
  • ½ cup roughly chopped parsley
  • Freshly ground black pepper (to taste)

Instructions

  1. Peel, slice, and dice the pear, tossing it with lemon juice to prevent browning. Set aside.
  2. Heat a skillet over medium heat and cook the turkey strips until golden brown. Remove from the pan and set aside.
  3. In the same skillet, sauté sliced shallots until softened, then stir in Dijon mustard.
  4. Add frozen peas and diced pears to the skillet, cooking for about five minutes until warmed through.
  5. Turn off the heat and fold in half of the crispy turkey strips along with fresh parsley and black pepper.
  6. Transfer to a serving bowl, topping with remaining turkey strips and lemon zest.
