  • 3 cups coleslaw mix
  • 1/2 cup grated carrot (optional)
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted, salted peanuts
  • 46 tortillas
  • 1/4 cup peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 Tbsp brown sugar or honey
  • 2 Tbsp rice apple vinegar
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp minced ginger
  • 1 tsp sriracha sauce
  • 12 Tbsp water (optional)

Instructions

  1. Whisk together peanut butter, soy sauce, brown sugar (or honey), rice apple vinegar, garlic, ginger, and sriracha in a bowl until smooth. Add water if needed for desired thickness.
  2. In a large bowl, mix cooked chicken, coleslaw mix, cilantro, grated carrot (if using), and peanuts. Drizzle with peanut sauce and toss gently.
  3. Warm tortillas in the microwave for 30 seconds until soft.
  4. Divide filling among tortillas, roll tightly, and serve immediately.
