  • 2 Tablespoons Olive Oil, divided
  • 12 oz Broccoli Florets
  • 1 pound Ground Beef
  • 1 inch piece Ginger, minced (optional)
  • 2 cloves Garlic, minced (optional)
  • 1 cup Teriyaki Sauce
  • 1/4 cup Light Mayo
  • 1 1/2 Tablespoon Sriracha or Chili Garlic Sauce
  • 1 Tablespoon Honey
  • 1 Tablespoon Rice Vinegar
  • 1/2 teaspoon Garlic Powder
  • Rice or Cauliflower Rice
  • Toasted Sesame Seeds
  • Scallions, thinly sliced

Instructions

  1. Prepare the yum yum sauce by mixing light mayo, sriracha, honey, rice vinegar, and garlic powder in a bowl; set aside.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and cook broccoli until slightly charred; transfer to a bowl.
  3. In the same skillet, add another ½ tablespoon of olive oil and brown the ground beef until fully cooked.
  4. Create a well in the center of the beef; add minced ginger and garlic to sauté briefly.
  5. Pour in teriyaki sauce, stir to combine with beef, then add broccoli back into the skillet and mix well.
  6. Serve over rice or cauliflower rice, drizzling with yum yum sauce; garnish with sesame seeds and scallions.
