  • 2 large russet potatoes (peeled and diced)
  • 1 tablespoon vegetable oil (plus more for frying)
  • ½ small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 pound lean ground beef
  • 16 corn tortillas
  • Toppings: Mexican crema, shredded lettuce, salsa, chopped cilantro, crumbled queso fresco

Instructions

  1. Boil the diced potatoes in salted water for about 20 minutes until fork-tender. Drain and mash lightly.
  2. In a skillet, heat oil over medium-high heat. Add onion and garlic; cook until fragrant. Add ground beef and brown it, stirring in chili powder, salt, garlic powder, onion powder, black pepper, and cumin.
  3. Combine the mashed potatoes with the cooked beef mixture. Season to taste.
  4. Warm tortillas to prevent tearing. Fill each tortilla with the beef-potato mixture and fold them into taco shapes.
  5. Fry tacos in hot oil (350°F -375°F) until golden brown on both sides. Drain excess oil on paper towels.
  6. Serve hot with your choice of toppings.
