  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans (15 oz)
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • Salsa for topping
  • 2 tablespoons olive oil

Instructions

  1. Rinse the rice under cold water until clear. In a saucepan, combine rice and chicken broth, bring to boil. Reduce heat, cover, and simmer for about 18-20 minutes.
