Ingredients

Scale
  • 1½ pounds boneless, skinless chicken thighs or breasts
  • 1 tablespoon olive oil or sesame oil
  • 1 ripe mango, peeled and chopped (or ¾ cup mango purée)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar or lime juice
  • 2 garlic cloves, minced
  • ½ teaspoon fresh grated ginger
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Instructions

  1. Prepare the mango glaze by blending chopped mango until smooth. Combine with soy sauce, honey/maple syrup, rice vinegar/lime juice, minced garlic, ginger, and optional chili flakes in a saucepan. Simmer for about 5–6 minutes until flavors deepen. Add cornstarch slurry and stir until thickened.
  2. Season chicken pieces with salt, pepper, and garlic powder. Heat oil in a large skillet over medium-high heat. Add chicken and cook for 6–8 minutes until golden brown and cooked through.
  3. Pour the mango glaze over the chicken in the skillet and toss gently to coat. Let simmer for an additional 2–3 minutes.
  4. Serve warm over jasmine rice or noodles garnished with sliced green onions, toasted sesame seeds, fresh herbs, and lime wedges.
