  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 1 can (8 oz) crushed pineapple in juice, undrained
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. In a bowl, mix together pineapple juice, brown sugar, soy sauce, crushed pineapple, minced garlic, ground ginger, salt, and pepper.
  3. Pour the sauce over the chicken ensuring even coverage.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  5. Remove chicken; whisk cornstarch with water to create a slurry and add it to the sauce in the slow cooker.
  6. Stir well to thicken; return chicken to the slow cooker for an additional 10-15 minutes.
  7. Shred or leave whole before serving over rice or noodles.
