  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • â…“ cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch, mixed with 2 teaspoons water for thickening
  • 1 tablespoon sesame seeds
  • 2 tablespoons green onions, sliced
  • Lime wedges, for serving

Instructions

  1. Prep all ingredients: Pat shrimp dry, season with salt and pepper; trim asparagus; mince garlic; grate ginger.
  2. Prepare the sauce by whisking together sweet chili sauce, soy sauce, honey, rice vinegar, and cornstarch slurry in a small bowl.
  3. Heat olive oil in a large pan over medium-high heat and stir-fry asparagus for 2–3 minutes until slightly tender. Remove from pan.
  4. In the same pan, cook seasoned shrimp with garlic and ginger for about 2 minutes per side until pink.
  5. Pour the sweet chili sauce mixture over the shrimp, stirring until thickened (about 1–2 minutes).
  6. Add cooked asparagus back into the pan and toss to coat.
  7. Serve hot with garnishes like sesame seeds and green onions.
