  • 1/2 cup melted butter
  • 1 cup softened butter
  • 2 tablespoons fresh sage, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 4 cloves garlic, minced
  • 3 teaspoons sea salt
  • 2 cups dry white grape juice
  • 2 cups chicken or turkey stock
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Add two cups of water to the bottom of a roasting pan.
  3. In a medium saucepan, combine melted butter, white grape juice, and chicken stock; set aside.
  4. Mix softened butter with herbs, garlic, lemon zest, and sea salt.
  5. Rub two-thirds of the herb mixture under the turkey's skin and spread remaining on top.
  6. Soak cheesecloth in the basting mixture and cover the turkey completely.
  7. Roast in the oven, basting every 20-30 minutes until thigh meat reaches 180-185°F (82-85°C), about 15-20 minutes per pound.
  8. Remove cheesecloth for the last 30-45 minutes to achieve golden skin.
  9. Let it rest for at least 15 minutes before carving.
