  1. Preheat your oven to 330°F (160°C) and line a 7 by 11-inch baking dish with parchment paper.
  2. Separate egg yolks from whites, ensuring no yolk contaminates the whites.
  3. Beat egg whites until stiff peaks form.
  4. In another bowl, cream egg yolks with monkfruit sweetener until light and fluffy; add vanilla if desired.
  5. Fold in non-fat Greek yogurt gently until combined.
  6. Sift in cornstarch and mix well.
  7. Carefully fold whipped egg whites into the batter to maintain airiness.
  8. Pour the batter into the prepared dish and place in a water bath on a larger sheet pan.
  9. Bake for 45 minutes at 330°F, then increase temperature to 350°F (180°C) and bake for an additional 15 minutes until golden on top.
  10. Cool in the oven with the door ajar for 1-2 hours.
