  • ½ cup onion (chopped)
  • ½ cup carrots (chopped)
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh sage
  • ¾ teaspoon salt (divided)
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 cups bread flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon granulated sugar
  • 1 ¼ cups buttermilk
  • 8 tablespoons unsalted butter (melted then cooled – divided)
  • 1 teaspoon fresh rosemary (chopped)

Instructions

  1. Preheat your oven to 425°F.
  2. In a food processor, combine celery, onion, carrots, thyme, sage, ¼ tsp salt, and black pepper; pulse until finely chopped.
  3. Sauté the vegetables in olive oil over medium heat for about 10–12 minutes until tender; let cool.
  4. In a large bowl, mix bread flour, baking powder, baking soda, sugar, and remaining salt.
  5. In another bowl, whisk together buttermilk and 4 tablespoons melted butter. Add this mixture to the dry ingredients and stir gently until combined; fold in the cooled vegetable mixture.
  6. Drop spoonfuls of dough onto a baking sheet (about 12 portions) and bake for 12 minutes.
  7. Brush with rosemary butter topping before returning to the oven for an additional 6–8 minutes until golden brown.
