  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 pound lean ground turkey
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ cup black beans (drained and rinsed)
  • ½ cup canned corn (drained)
  • ½ cup diced tomatoes
  • ¼ cup chopped fresh cilantro
  • ½ cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and poke holes in each with a fork. Place directly on the oven rack and bake for about 45–50 minutes until soft.
  2. While baking, heat olive oil in a skillet over medium heat. Add diced onion; sauté for about 3–4 minutes until translucent. Add minced garlic; cook for an additional 30 seconds.
  3. Stir in ground turkey; cook until browned. Season with smoked paprika, chili powder, cumin, salt, and pepper.
  4. Add black beans, corn, and diced tomatoes to the skillet; simmer for about 5–7 minutes until flavors meld.
  5. Once sweet potatoes are tender, slice them open lengthwise and gently mash the flesh. Fill each potato with the turkey mixture.
  6. Top with shredded cheese and return to the oven for an additional 5 minutes until cheese is melted.
