  • 1 tbsp extra-virgin olive oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3/41 lb ground beef
  • 24 oz marinara sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 32 oz ricotta cheese
  • 2 eggs
  • 1 cup cooked spinach, drained and chopped
  • 1/4 cup mozzarella cheese
  • 1/4 cup shredded Parmesan
  • 1 box jumbo shells
  • 2 cups mozzarella cheese, for topping
  • Fresh parsley, for serving

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook jumbo shells according to package instructions until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté diced bell peppers until softened. Add ground beef, cooking until browned; season with garlic powder, salt, and pepper.
  4. In a mixing bowl, combine ricotta cheese, chopped spinach, eggs, mozzarella, Parmesan cheese, and seasonings.
  5. Fill each shell with the ricotta mixture and arrange in a baking dish topped with marinara sauce.
  6. Cover with foil and bake for 20 minutes. Remove foil, sprinkle additional mozzarella on top, and bake uncovered for another 15 minutes until golden.
