  • 1 pound white button mushrooms, cleaned and sliced thick
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, finely minced
  • 1 tablespoon Worcestershire sauce (use non-alcoholic variety)
  • 1 tablespoon soy sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon paprika
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon chili powder (optional)
  • Fresh parsley or chives for garnish
  • Salt to taste

Instructions

  1. 1. Clean the mushrooms by gently wiping them with a damp paper towel.
  2. 2. Slice the mushrooms thickly (about half an inch).
  3. 3. Heat a large skillet over medium-high heat and add 2 tablespoons of butter.
  4. 4. Once melted, add the mushrooms in a single layer and sauté for about 4–5 minutes until golden brown.
  5. 5. Reduce heat to medium, add the remaining butter, and let it melt.
  6. 6. Stir in minced garlic and sauté until fragrant (about one minute).
  7. 7. Add Worcestershire sauce, soy sauce, oregano, tarragon, paprika, black pepper, and optional chili powder; toss to coat.
  8. 8. Simmer for another couple of minutes and adjust salt if needed.
  9. 9. Garnish with fresh parsley or chives before serving.
