  • 450g flank or sirloin steak
  • 1½ cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup long-grain white rice
  • 2 tbsp butter
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tsp ground cumin
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 2 cups broth or water
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños

Instructions

  1. Season the steak with olive oil, paprika, cumin, garlic powder, salt, and pepper. Sear in a hot skillet for 4–5 minutes per side until cooked to your preference. Let rest before slicing.
  2. Rinse the rice until water runs clear. In a pot, heat olive oil and toast rice with garlic powder; then add broth/water and simmer for 18–20 minutes.
  3. In the same skillet used for steak, melt butter and sauté garlic until fragrant. Gradually add milk and cheeses, stirring until smooth.
  4. Serve sliced steak over rice and drizzle with queso sauce. Garnish with cilantro, lime wedges, avocado slices, and jalapeños.
