  • 2 tablespoons honey or agave syrup

Instructions

  1. Cook rice vermicelli noodles according to package instructions; drain and rinse under cold water.
  2. While the noodles cool, thinly slice carrots, bell peppers, cucumber, and green onions.
  3. In a large bowl, combine shredded carrots, sliced bell peppers, cucumber, bean sprouts, cilantro, mint leaves, and green onions.
