Spring Mix Salad is a vibrant celebration of fresh, seasonal ingredients that come together to create a delightful dish perfect for any occasion.   • 6 cups spring mix lettuce (or Tuscan lettuce blend or 1 head Romaine lettuce)
  • 1 cup cherry tomatoes, halved
  • 1/2 large English cucumber, sliced
  • 1/4 small purple onion, chopped
  • 1/3 cup fresh herbs (basil and mint), chopped
  • 1/2 cup feta cheese
  • 1 avocado, peeled and chopped
  • 1/2 cup apple vinegar vinaigrette (homemade)
  • 1 garlic clove, grated
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon dried Italian seasoning
  • 1/8 teaspoon red pepper flakes (optional)
  • 2 teaspoons Dijon mustard
  • 1 cup olive oil
  • Pinch of salt and pepper to taste

Instructions

  1. Add the spring mix lettuce to a large mixing bowl.
  2. Layer in the sliced cucumber, halved cherry tomatoes, chopped onion, fresh herbs, feta cheese, and avocado.
  3. In another bowl or jar, combine apple vinegar, grated garlic, dried oregano, Italian seasoning, red pepper flakes (if using), Dijon mustard, and olive oil. Whisk or shake well until emulsified.
  4. Drizzle the vinaigrette over the salad ingredients and toss gently to coat evenly.
  5. Season with salt and pepper to taste before serving.
