  • 1 ½ pounds mini potatoes (red mini creamer or similar)
  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Parsley flakes for garnish

Instructions

  1. Preheat your oven to 385°F.
  2. Line a baking sheet with parchment paper.
  3. Wash the mini potatoes thoroughly and let them dry.
  4. In a bowl of cold water mixed with 2 tablespoons of lemon juice, carve skull faces into each potato and place them in the lemon water to prevent browning.
  5. In another bowl, mix olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper.
  6. Drain the carved potatoes and toss them in the seasoning mix until well coated.
  7. Arrange the potatoes face side up on the baking sheet and bake for about 30 minutes until golden brown and tender.
  8. Garnish with parsley flakes before serving.
