  • 12 oz penne pasta
  • 1 lb chicken breast
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • ¼ tsp cayenne pepper
  • Fresh parsley or cilantro, chopped
  • Juice of ½ lime
  • ½ cup reserved pasta water

Instructions

  1. Cook the penne pasta in salted water until al dente; reserve ½ cup of pasta water before draining.
  2. Season the chicken with salt, pepper, and Cajun seasoning. Sear in a hot skillet until cooked through; set aside.
  3. In the same skillet, sauté sliced bell peppers and minced garlic in olive oil and butter until softened.
  4. Add Cajun seasoning, smoked paprika, and red pepper flakes; toast for about 30 seconds.
  5. Pour in heavy cream and simmer until thickened; stir in Parmesan cheese until creamy.
  6. Toss the cooked pasta and chicken into the sauce; add reserved pasta water as needed for consistency.
  7. Garnish with fresh herbs and lime juice before serving.
