  • ¾ tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp soy sauce (low sodium)
  • 2 green onions (chopped)
  • 1.5 tbsp rice apple vinegar
  • 2 cloves garlic (crushed)
  • 1 tsp sesame seeds (optional)
  • 2 tsp chili oil (optional)

Instructions

  1. Cut off both ends of the mini cucumbers and spiral slice them using chopsticks for guidance.
  2. Place cucumber spirals in a bowl, sprinkle with salt, and let rest for 15-30 minutes.
  3. Rinse the salted cucumbers under cold water, then pat dry.
  4. In a separate bowl, whisk together soy sauce, brown sugar, sesame oil, rice apple vinegar, crushed garlic, and optional chili oil until smooth.
  5. Toss the cucumbers with the dressing until evenly coated.
  6. Add chopped green onions and mix gently.
