  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon oregano
  • ⅛ teaspoon red pepper flakes
  • 1 cup water
  • Optional: shredded cheese

Instructions

  1. In a large skillet over medium heat, cook the ground beef with onion, bell pepper, and garlic until browned. Drain excess fat.
  2. Stir in chili powder, cumin, salt, pepper, garlic powder, oregano, and red pepper flakes; cook for about 1 minute.
  3. Add sweet potatoes and black beans along with water; stir well. Cover and simmer on medium-low for 15-20 minutes or until sweet potatoes are tender.
  4. Remove the lid and allow any excess liquid to evaporate on medium heat for a few minutes.
  5. If using cheese, sprinkle it over the skillet and cover for about 5 minutes until melted.
  6. Serve hot with your favorite toppings like sour cream or avocado.
